Xylitol is a totally natural product sourced from the birch tree. It has 40% fewer calories than sugar; it has minimal effect upon blood sugar levels; Xylitol has anti-fungal properties; it does not cause tooth decay and may actually decrease bacterial levels in your mouth and it serves as a prebiotic i.e. provides food for the good bacteria in your gut. So, if you cannot resist a touch of extra sweetness in drinks or in food, opt for this healthy alternative. However, it cannot be used in baking as the anti-fungal action will kill of the yeast required to make baked goods rise.
